Coronation Victoria Sponge ๐Ÿ‡ฌ๐Ÿ‡ง

As a lover of baking I decided to make the timeless British classic dessert known as Victoria Sponge. This cake features a classic combination of whipped cream and strawberry jam filling, layered with fresh strawberries. This luscious filling adds a light and fruity contrast to the soft and fluffy sponge cake. Victoria Sponge cake is often served to celebrate special occasions such as the King’s Coronation.

Classic Victoria Sponge Cake

I have included a recipe for you to try out, so head over to Jane Patisserie for this sweet treat! You can replace cream/butter with delicious non-dairy alternatives to regular dairy. I used whipped cream for the filling, but you could use buttercream instead if you like.

For the buttercream filling:
85g butter, softened
175g icing sugar, sifted
3 teaspoons vanilla extract
200g strawberry jam
Fresh strawberries (optional)
Icing sugar to dust
